Ingredients

  • 1 cup fresh dandelion leaves

  • 1 cup raw sunflower seeds

  • ¼ cup olive oil

  • 3 Tbsp lemon juice

  • ½ tsp sea salt

Instructions

  1. Optional: Sprout the sunflower seeds
    Soak the seeds in water overnight. The next day, rinse thoroughly and allow to dry completely.
    Sprouting reduces phytic acid — a naturally occurring compound that can inhibit mineral absorption — potentially increasing the bioavailability of zinc, magnesium, and iron. However, this step may also slightly reduce the seeds’ vitamin E content.

  2. Blend
    Add all ingredients to a food processor. Pulse until your desired consistency is reached — smooth for a creamy spread, or coarse for a rustic texture.
