When I used to lead road trips for college programs, I’d always whip up a batch of these energy balls. They were my secret weapon against the lure of gas station junk food — and they worked every time.

These bites are packed with whole-food ingredients that support energy, hormone health, brain function, and digestion — all without the crash. Think of them as little powerhouses: perfect before or after a workout, during an afternoon slump, or even as a nourishing, no-guilt dessert.

Ingredients

  • 1 cup (120g) pumpkin and/or sunflower seeds

  • ¾ cup (130g) coconut oil or ghee

  • ⅝ cup (70g) organic whole flaxseeds

  • ⅝ cup (70g) hempseed hearts

  • ½ cup (75g) high-quality cocoa or carob powder

  • 2½ Tbsp (55g) raw organic honey

  • 1 tsp sea salt

  • Optional: Unsweetened coconut flakes for rolling. Cacao nibs and maca powder are also excellent additions, making the flavor reminiscent of Easter candy.

Instructions

  1. Grind flaxseeds with a spice grinder into a fine powder.

  2. Add all ingredients to a food processor and blend until smooth and dough-like.

  3. Taste and adjust ratios to suit your preferences.

  4. Roll into bite-sized balls.

  5. Optional: Dust or roll in coconut flakes for extra texture and flavor.

  6. Store in the refrigerator. Enjoy chilled for the best texture!
